Vegan/Gluten Free BBQ Chickpea Salad

Welcome to another vegan, gluten free, allergen friendly super healthy and yummy recipe! I make about 4 salads a week so I’m not necessarily saying I’m a salad connoisseur… But I’m pretty well versed in the salad department. Today we are making my new favorite: BBQ Chickpea Salad!

When I make this salad, I make a big batch and save it for an extra day and use it as an entree. It can totally be made as a side dish too! Oh! How about potluck salad at your next family BBQ?! Bingo!

Lets Get to the Good Stuff!

This salad is filled with beautiful colors and delicious and complex (in a good way, duh!) flavors. I always begin with a base of assorted greens. My usual go-to is mixed lettuce like romaine or even a spring mix and I always add a bit of kale. Next I chop up some colorful veggies like bell pepper, celery, onion, carrots and avocado to add on top of my greens. 

If I’m on a time crunch or just *very* lazy, I’ll add my drained and rinsed canned chickpeas. If I have more time (or energy) I like to add my chickpeas to a nonstick pan and cook them in my favorite BBQ sauce and a bit of lemon juice for a few minutes until the BBQ sauce sticks well to the cooked chickpeas. 

I add those chickies to my greens and veggies and then top with canned, frozen or fresh corn and slivered almonds for some extra protein.

On to the Dressing!

I have a few variations for the dressing. If I do cook my chickpeas in the BBQ sauce, I’ll add my favorite vegan ranch dressing or a mixture of tahini and some lemon juice.

If I decide to just add the chickpeas without cooking them in anything first, I’ll make a concoction of BBQ sauce, tahini, lemon juice, onion powder, salt and pepper. (Of course! Y’all… Never forget your salt and pepper on your salads. Its a simple step that really changes the dish.) And to reach my desired consistency, I add in a few teaspoons of water at a time. *chefs kiss* So tasty!

Just like the majority of my other recipes, I don’t like to add quantities of ingredients because I believe that the beauty of cooking a creating delicious and healthy meals is such a personal experience with yourself and the craft of cooking. Measure with your heart!

Vegan/ Gluten Free BBQ Chickpea Salad

This tasty, allergen-friendly salad is packed with protein, a ton of vegetables and is great as a min course, appetizer or side dish.
Course: Appetizer, Main Course, Side Dish

Ingredients

  • Greens of your choice like romaine, spring mix, etc
  • Kale always massage your kale first
  • Bell Pepper
  • Carrots
  • Celery
  • White Onion
  • Avocado
  • Canned Chickpeas
  • Slivered Almonds

Dressing

  • BBQ Sauce of your choice
  • Tahini
  • Lemon Juice
  • Onion powder, Salt, Pepper
  • Water to reach desired consistency

Instructions

Salad Assembly

  • Add your mixed greens and massaged kale to a bowl
  • Wash and chop up your bell pepper, celery, carrots and onion and add to your bowl of greens
  • Either cook your chickpeas in a bit of BBQ sauce and lemon juice on a nonstick pan for a few minutes or just add the chickpeas to your bowl. Add your sliced avocado and almonds

Dressing

  • Add your desired amount of BBQ sauce, tahini, lemon juice, onion powder, salt, pepper and water.
